What an awesome idea! I love making omelettes but never once thought to try baking them in muffin cups. I'm not technically doing Paleo, just looking for healthier ideas and tips and this certainly qualifies. However, I had to add just a little feta cheese, herbs (you have to have tarragon with eggs), used chicken instead of ham as that's what I had on hand, and added some diced mushrooms. This is ultra versatile and you can use any omelette recipe and alter it for this baking technique. It's sort of like an omelette meets fritatta in a muffin cup.

I don't know why this recipe includes water - completely unnecessary when I made them. I like chopped spinach in mine. Next time, I'm going to put fresh spinace in the paper liners, and then pour in the muffin mix instead of mixing the spinach in with everything else...

I thought this was pretty good for a quick on the go breakfast. I used the muffin liners but it did stick so suggest spraying them as well. I agree that the addition of some cheddar cheese is a good one. I like that it is so versitle (will try bacon next time as I am not a fan of ham and egg). I followed directions as is.
