Saucy Slow Cooker Pork Chops Recipe

My daughter came home from school and said our house smelled like a Mexican restaurant which gave me the idea of making this fajita style so I heated up some flour tortillas and layered it with rice, since I had already made it, and then topped it with the pork mixture. I used the exact recipe, except I followed the advice of a previous reviewer and cut my cooking time down to five hours on low. Meat was tender and juicy. However, next time I make this, I might add something to give it a little kick.
Great basic recipe. With a few tweaks that I made up as I went along, it earned nothing but a bunch of "mmmmmms" from hubby. I had two 3/4 inch or so bone in chops and 2 bone in pork loin "steaks", also about 3/4" thick. Browned all in a little oil. Then had a half of a red bell pepper and half of a pablano pepper that needed to be used. Sliced those with the onion and gave them a quick saute in the pan that I used to brown the meat. I just knew that 8 oz of tomato sauce would be nowhere near enough, so I used a 15 oz can and doubled the rest of the sauce ingredients. Put the veggies on top of the meat in the crock pot and poured sauce over. Added fairly generous sprinkling of course ground black pepper over the top. As other reviewers noted that the pork was dry, I cooked on high for about 2 hours, then on low about another hour. Set to "keep warm" for about an hour before serving. Made the sauce as is, but omitted the peppers (a family member does not eat them). Cooked for 6 hours and no more, per others' comments about pork drying out in slow cooking. Sauce was delicious and 5-star, received compliments. But still a tad dry, hence the 4-star rating. Maybe I will try cooking it for a shorter time in the future.
This was totally delicious and just slightly sweet. I substituted V-8 Juice (2 small 5oz low salt cans) as I did not have any tomato juice handy and I used a mix of red, green and yellow bell peppers (Trader Joe's frozen bell pepper trio - I keep em in the freezer for just such occasions). *I made the side of rice with more V-8 juice and just a little water with a pinch of salt. It was a great compliment to the sauce. For sure will be making again, oh yes indeed!
